Graudaugu plācenīši ar kāpostu un ābolu salātiem medus mērcē / Rice and buckwheat balls with cabbage and apple salad in honey sauce

Pēc bloga ierakstiem spriežot, var padomāt, ka es reti gatavoju ēst ;) Nē, tā nav - gluži vienkārši pēdējā laikā sanāk gatavot ļoti parastus ēdienus, jo ir daudz darāmā, kas paņem savu tiesu uzmanības. Toties šodien rekords - veseli divi ieraksti!

Judging from the blog entries it may seem that I cook very rarely ;) No, that's not true – my family's meals have just been very simple recently because I've been busy with so many different things that I could not pay attention to something else. Now I want to settle my 'recipe debt' by publishing two recipes in one day (yes, that's a record!).

Graudaugu plācenīši

puskrūze rīsu
puskrūze griķu
1/3 krūzes izmērcētu, sablendētu ķirbju un saulespuķu sēklu
pa šķipsniņai asafetīdas, maltu romiešu ķimeņu un Creole Seasoning (maisījums, kas sastāv no maltiem saldajiem pipariem, čili, sīpoliem, pipariem, sinepju sēkliņām, bazilika, fenheļa, ķiplokiem un sāls)
ēdamkarote ghī sviesta
sāls
eļļa vai ghī sviests cepšanai
zirņu milti vai rīvmaize panējumam

Atsevišķos katlos, katrā ielejot krūzi ūdens un pieberot sāli, izvāra rīsus un griķus, lai tie būtu ļoti mīksti. Saber kopā, pievieno sēkliņas, ghī sviestu un garšvielas. Samīca. Pannā uzkarsē taukvielas, ar rokām veido kotlešu lieluma plācenīšus, apviļā tos miltos vai rīvmaizē un cep, kamēr brūni.

Rice and buckwheat balls

½ cup rice
½ cup buckwheat
1/3 cup mixed pumpkin and sunflower seeds, soaked and ground
a pinch of asaphoetida, ground cumin and Creole Seasoning (blend consisting of paprika, chili, onion, black pepper, mustard seeds, basil, fennel, garlic and salt)*
1 tbs ghee
salt to taste
ghee or cooking oil for frying
gram flour or breadcrumbs for rolling

Cook the rice and the buckwheat in separate skillets according to the instructions on the package (they have to be very soft, even falling apart). Mix together. Add the seeds, 1 tbs ghee and the spices. Heat ghee or cooking oil in a pan over medium heat. Form small cereal balls using your hands, roll them in gram flour of breadcrumbs, put on the pan and fry until they are golden brown.

* a pinch of each spice, i.e. 3 pinches altogether




Kāpostu un ābolu salāti medus mērcē

Apmēram 1/5 vidēji liela kāposta
2 āboli
malti melnie pipari

Medus mērcei: 1/3 tasītes olīveļļas, ēdamkarote balzametiķa, tējkarote medus, šķipsniņa sāls

Kāpostus sīki sasmalcina, ābolus sagriež šķēlītēs (kā ābolkūkai), bļodā samaisa kopā ar pipariem. Sakuļ mērces sastāvdaļas.

Uz šķīvja kārto plācenīšus un liek salātus, tos pārlaistot ar medus mērci. Dekorē pēc vēlēšanās, piemēram, ar dillēm, pētersīļa lapiņu un saulē kaltētiem tomātiem.

Cabbage and apple salad in honey sauce

About 1/5 medium cabbage, finely chopped
2 apples, sliced
freshly ground black pepper

Honey sauce: 1/3 cup good olive oil, 1 tbs balsamic vinegar, 1 tsp honey, pinch of salt

Put rice and buckwheat balls on plates, add the salad poured with honey sauce and, if you wish, garnish with fresh dill, parsley leaves and sundried tomatoes.

Zupa rudens noskaņās / Soup in autumn mood

Jā, zinu jau zinu - no blogā publicēto recepšu kopuma zupas veido nospiedošo vairākumu, bet neko nevaru līdzēt, jo tieši tās man visvairāk patīk gatavot!

I know, I know – the overwhelming majority of the recipes published here are soup recipes. I cannot help it, for I simply love to cook soups!

Šodien pusdienās gardu muti apēdām burkānu un ābolu zupu:

For today's lunch, we had a delicious carrot and apple soup:

4 nelieli burkāni
4 vidēji lieli, skābeni āboli
pussīpols
2 krūzes trekna piena
2 ēdamkarotes ghī sviesta
2 tējkarotes karija
1/2 tējkarote garammasalas
sāls
malti melnie un sarkanie pipari (pārkaisīšanai)
pētersīļa lapiņas un saulespuķu sēkliņas (rotāšanai)

4 small carrots, halved and sliced
4 medium-sized sour apples, cubed
½ onion, chopped
2 cups whole milk
2 tbs ghee
2 tsp curry
1/2 tsp garam masala
salt
ground black and red pepper
parsley leaves and sunflower seeds (for garnishing)


Pagatavošana:

Pannā unkarsē ghī sviestu, īsu brīdi apcep kariju un garammasalu. Pievieno sasmalcinātu sīpolu un brīdi pasautē. Pēc tam pievieno pusripiņās sagrieztus burkānus un ābolu gabaliņus. Nedaudz apcep. Pielej pavisam nedaudz ūdens, liek virsū vāku un sautē, līdz burkāni ir mīksti. Pa to laiku katlā uzsilda pienu, pievieno tam pannas saturu un visu sablendē. Pieber sāli pēc garšas un uzvāra, līdz zupa uzmet pirmo burbuli. Lej šķīvjos, dekorē ar pētersīļiem, uzmaļ melnos un sarkanos piparus, gar šķīvja malām uzkaisa saulespuķu sēkliņas.

Preparation:

Melt ghee in a pan, add curry and garam masala and fry for several seconds (don't burn!). Add the chopped onion and sauté until it is soft yet not browned. Then add the carrots and the apples and fry for a moment so that they soak in the flavor of spices and onion. Add small amount of water and continue to cook under the lid until the carrots are soft. In the meantime, heat the milk in a pot, add the pan contents, mix well and puree using a blender. Add salt to taste and bring the soup to boil. Serve garnished with ground black and red pepper, parsley leaves and sunflower seeds.


Piebilde:
Ja zupu vēlas maigāku, ne tik asu, tad liek uz pusi mazāk karija vai arī pēc blendēšanas pielej nedaudz gāzēta ūdens vai dzirkstošā vīna.

Note:
If you wish your soup to be softer and less spicy, add half the amount of curry or, when blending the soup, add some soda water or sparkling wine.
